Ingredients

  • 7in(18cm)×3in(8cm)loaf pan
  • 1 Egg(40g) (room temperature)
  • 40g Granulated sugar
  • 30g Cake flour
  • 20g Almond flour
  • 2g Baking powder
  • Zest of one lemon
  • 30g Melted butter

For Toppings:

  • ★30g Lemon juice
  • ★10g Water 水 10g
  • ★15g Granulated sugar
  • (Microwave at sugar and water, add lemon juice )

40g Melted white chocolate

Instructions

Preparation:

  1. Finely grated lemon zest and squeeze lemon
  2. Line the cake pan with parchment paper.

  1. Whole egg and sugar into the bowl.
  2. Beat it quickly with the hand-mixer until it gets thick. Beat it until the mixture thickly sticks to the mixer and falls like ribbon.
  3. Add shifted cake flour, Almond flour, and Baking powder, mix.
  4. Add lemon zest and melted butter, mix again.
  5. Pour the mixture into a loaf pan, drop it for a few times to degas.
  6. Preheat the oven at 338 °F/170℃ and bake it for 18 min.
  7. Using a pastry brush, spread lemon juice mixture(★) all over the top and sides of the cake and let soak in.
  8. Spread the melted white chocolate over the cooled Cake.
