  • 55g Egg White
  • 50g Caster Sugar
  • 70g Icing sugar
  • 70g Almond meal
  • 7g cocoa powder

Filling

  • 70g Whipping cream
  • 100g Dark Chocolate
  • 15g Butter

Instructions

Separate the eggs, place the egg whites in a clean container, and let them hang out in the fridge for 3 days before using. This will dehydrate them and make them perfect for macarons.
