Strawberries Tart

Ingredients

Tart crust

  • 6 tbsp sugar
  • 9 tbsp unsalted butter, softened
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt

Pastry Cream

  • 2 1/4 cups whole milk
  • 2/3 cups sugar
  • 8 egg yolks
  • 2 tbsp cornstarch
  • 1 vanilla bean

Fruit glaze

  • 9-10 strawberries
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tbsp cornstarch

Instructions

Tart crust

  1. Mix together the flour with the softened butter
  2. Whisk thoroughly the egg with until the sugar has dissolved
  3. Add the egg and sugar mixture to the flour and mix it well until they combine.
  4. Wrap it in a plastic foil and put it in to the refrigerator for 30 - 40 minutes
  5. Flour the work surface and a rolling pin. Un-wrap the dough and roll it in to a rectangle about 1/8 inch thick
  6. Place the tart ring and cut the form
  7. If the dough is soft, refrigerate for 30 minutes. The dough should be firm at touch but not stiff, could crack ( let it few minutes at room temperature and you can repair crack )
  8. Place the dough round on top of the ring, push down gently and press the dough along the inside of the ring.
  9. Refrigerate for 30 minutes
  10. Cut the excess dough
  11. bake in a preheat oven at 375°F for 8 - 10 minutes.
  12. let it cool

Pastry Cream

  1. Put the milk with the vanilla on low heat
  2. whisk together the egg yolks with sugar
  3. Add little hot milk in to the eggs and stir to tempered
  4. pour the whole mixture in to the milk and whisk together
  5. add the cornstarch and mix it well. Continue mix constantly for 3 - 4 minutes on low heat until is thickened
  6. Put the cream on to a very fine sieve and press it down for a very smooth and creamy texture.
  7. Cover with a plastic wrap, pressing it down gently removing the air.
  8. Let it chill and put it to the refrigerator for at least 4 hours.

Fruit glaze

Homemade jam glaze - In a saucepan put 9 - 10 pieces of strawberries, add 1/2cups sugar and 1/2 cup of water. Bring up to boil on medium heat. After few minutes after the fruits are soft, you can blend all together. You can add 1tbs of cornstarch to thicken more the sauce. Let it cool down
