Long time no see! It has been almost 2 weeks since I have been able to cook in my own kitchen and I am DYING for some home cooked food! This avocado chicken salad is so fresh and flavorful! You’d think a recipe this easy wouldn’t taste that spectacular, but this really is insanely delicious! Juicy rotisserie chicken, crispy bacon, creamy avocado, fresh green onion, refreshing cucumber, bright red tomatoes, and sweet corn all topped with a simple yet bright lemon dressing. You are going to LOVE this, trust me!

Ingredients

  • 1 cup English Cucumber, Diced
  • ½ Cup Green Onion, Diced
  • ¾ Cup Cherry Tomatoes, Halved
  • 6 Strips Bacon, Cooked and Diced
  • 2 Large Rotisserie Chicken Breasts, Diced
  • 2 Large Avocados, Diced
  • 1 cup Corn

Dressing:

  • 3 Tablespoons Olive Oil
  • 3 Tablespoons Lemon Juice
  • 1 Teaspoon Dijon Mustard
  • 1 Teaspoon Garlic Powder
  • 2 Teaspoons Dried Dill
  • 2 Teaspoons Italian Seasoning
  • Salt and Pepper to Taste

Instructions

  1. Mix chopped cucumber, chopped tomatoes, chopped onions, diced chicken breast, diced avocado, cooked corn, and cooked bacon in a large bowl.
  2. Dressing: Whisk together olive oil, Dijon mustard, lemon juice, dried dill, Italian seasoning, garlic powder, salt, and pepper to taste.
  3. Pour dressing over salad and mix.

Notes

To cook bacon in the oven:

Place slices of bacon on a baking sheet lined with aluminum foil. Cook in a preheated 400°F oven for 20-30 minutes, flipping halfway through, until brown and crispy. Drain excess oil on a paper towels.

To cook frozen corn:

In a small saucepan over high heat, bring 1 ½ Cups of water to a boil. Add frozen corn and cook for 3 minutes. Remove from heat, drain, and rinse with cold water. Drain off excess water and add to the salad.
