Long time no see! It has been almost 2 weeks since I have been able to cook in my own kitchen and I am DYING for some home cooked food! This avocado chicken salad is so fresh and flavorful! You’d think a recipe this easy wouldn’t taste that spectacular, but this really is insanely delicious! Juicy rotisserie chicken, crispy bacon, creamy avocado, fresh green onion, refreshing cucumber, bright red tomatoes, and sweet corn all topped with a simple yet bright lemon dressing. To cook bacon in the oven:
Place slices of bacon on a baking sheet lined with aluminum foil. Cook in a preheated 400°F oven for 20-30 minutes, flipping halfway through, until brown and crispy. Drain excess oil on a paper towels.
To cook frozen corn:
In a small saucepan over high heat, bring 1 ½ Cups of water to a boil. Add frozen corn and cook for 3 minutes. Remove from heat, drain, and rinse with cold water. Drain off excess water and add to the salad.
