Ingredients

  • Risotto - about 600g / 1.3 lb
  • Bacon ( pancetta is better )- about 200g / 0.5 lb
  • Mozzarella - about 200g / 0.5 lb
  • some chives
  • panko breadcrumbs
  • 2 eggs

Instructions

  1. You spread down the rice in a baking tray to let it cool down
  2. Sprinkle a little bit of chive
  3. After it is cool you can start forming the balls.
  4. In a wet hand with water, spread some risotto, put in the middle some mozzarella and bacon, and bring the sides to center and form the ball.
  5. Cool them in the freezer 30 minutes to firm.
  6. Fry them in frying oil heated up to 170°C / 340°F for about 7 - 10 minutes.
