Ingredients

  • 70 g | 2,5 oz semi-sweet chocolate
  • 70 g | 2,5 oz unsalted butter
  • 2 tbsp cocoa powder
  • 175 g | 6,2 oz graham crackers or digestive biscuits

  • 500 g | 17,5 oz cottage cheese (low fat)
  • 2 tbsp chia seeds
  • 180 ml | 3/4 cup milk (low fat)
  • 2 tbsp xylitol (or sugar)
  • 1 tbsp gelatin
  • 120 ml | 1/2 cup hot water

  • 1 big can (820ml | 28oz) of peaches, only half of syrup
  • 1 tbsp gelatin
  • 120 ml hot water

Instructions

  1. In small bowl combine milk and chia seeds. Place in a fridge for at least 2 hours.
  2. Dissolve gelatin in hot water, cool slightly.
  3. Prepare round cake tin 25cm | 10” lined with parchment paper.
  4. Melt butter and chocolate over boiling water or in microwave. Stir in cocoa powder.
  5. Crush graham crackers until finely ground. You can use food processor.
  6. Combine crackers with melted chocolate mixture. You should receive wet sand texture.
  7. Press it into bottom of pan using glass. Place in a fridge until firm.
  8. Use electric mixer to loose cottage cheese, add xylitol and dissolved gelatin in. Mix until smooth.
  9. Pour milk with chia seeds into the bowl with cheese, stir with spatula until combined. Mixer might crush delicate seeds. Check if it is sweet enough for you. If not, add more sweetener, but my intention was to make a cake with reduced amount of sugar.
  10. Spoon cheese mixture into prepared crust and level the surface. Place in the fridge for at least 30 minutes or until firm.
  11. Blend peaches with half amount of syrup until smooth, combine with dissolved gelatin. Pour over firmed cheesecake. Place in the fridge for at least 1,5h or until firm.
  12. Gently remove tin and share portion with friends or family! ???? Serve chilled.
