Today I made my favorite apple pie~ For me, even if I eat it, I don't get tired and I want to eat it again. ^^;; It is crispy and grainy without making it difficult to make. The conclusion is that by using only yolk instead of white, you can complete a more delicious pie.. ^^ I used the apple of the species'Cortland', but it looks pretty, but I bought it because it sells at the cheapest price. It was about the size of an apple in Korea. In fact, Canadian apples here are usually smaller than Korean apples. I felt that this apple was stronger than Korean apples. However, apples that go into Apple Pie Peeling have more sour taste than apples with a strong sweet taste. There is an apple with a strong acidity! With this recipe, you can make 12 pies measuring 5cm*9cm wide. After cutting it straight into squares, there will be a little bit of pie sheet and apple peeling on the edge. Put the pie sheets together and bloom in a round shape. Put the remaining filling in the center and fold the edges to bake to complete another apple pie! Actually, I don't even know if you thought it was just a virtual place. Ah, it tasted like a homemade raspberry welch. But actually it was much better than Welch's. Pie crust:

  • 250g all-purpose flour
  • 2g salt
  • (If you use salted butter, you don’t need to add salt)
  • 140g cold butter
  • 2ea egg yolk
  • 60g cold water

Apple filling:

  • 10g butter
  • 3ea large (medium size in Korea) = about 330g apple
  • 15g lemon juice
  • 1g salt
  • 60g brown sugar
  • 30g sugar
  • 1g cinnamon powder
  • 2tsp = 6g cornstarch

Egg wash:

  • 1ea egg yolk
  • 1tsp milk


  1. Cut apples according to your taste. I didn't cut them too small because I liked the taste of chewing.
  2. Add the cinnamon as you like.
  3. Bake at a high temperature until the golden brown to preserve the crispness of the pie. Bake the golden brown.
  4. After melting the butter, I added the apple and later added starch, but you can add it all at once. ^^
    *The reason for adding starch is to make the ingredients adhere and taste better.

Pie crust:

  1. Mix egg yolks in cold water and place them in the refrigerator for a while. (I'm putting it in order to keep it as cold as possible.)
  2. Cut the cold butter into about 1.5cm*1.5cm cubes of flour and chop it into small pieces to make it look like rice.
  3. Add the prepared cold water plus yolk, then mix again with a scraper. When mixed, fold them together and form a lump.
  4. After rapping, let it rest for about 1 hour in the refrigerator.

Apple filling:

  1. Cut the peeled apple into small pieces.
  2. Dissolve the butter slightly and add all the ingredients and simmer them over medium heat in a pot.
  3. Add starch, stir-fry until almost no moisture and feel like sticking together, and then put it in the fridge to cool it down.

Egg wash

Mix the yolk with milk, and make sure to sieve it once. ^^

Assembling and baking

  1. Make pie crust 30cm to 36cm (If it's too hard to do it, just leave it at room temperature and use it.)
  2. Cut to 36cm by 30cm, and cut to 9cm by 10cm, 12ea for each pie.
  3. Apply water to the edges of each piece of the pie sheet (to make it stick together later).
  4. Place 1 tablespoon of prepared apple fillings, fold in half, and fork the edges to paste.
  5. Transfer to a tray, apply egg water and use a knife to make an air hole.
  6. In a preheated 200 degrees oven, bake 20-25 minutes in a crisp, golden brown, depending on the oven.
  7. Cool slightly on the tray and eat while it's hot.^^)
