Today I want to show you how easy it is to turn lentils into gluten-free bread and also want to take this lentil bread to the next level by turning it into a magnificent savory lentil cake.

LENTIL BREAD+Lentil Cake

Ingredients

Lentil Bread

  • 2 cups red lentil
  • 1 cup yoghurt
  • 4 eggs
  • 2 packs of baking powder, 20 g
  • 1 teaspoon salt
  • 60 ml olive oil
  • Nigella & sesame seeds

Savoury Lentil Cake

  • 2 cups red lentil
  • 1 cup of yoghurt
  • 4 eggs
  • 2 packs of baking powder, 20 g
  • 1 teaspoon salt
  • 60 ml olive oil
  • 250 g halloumi, diced
  • 4 sprigs of spring onion, chopped
  • 15 sprigs of dill, chopped
  • 1/2 teaspoon black pepper
  • Nigella & sesame seeds

Instructions

Lentil Bread

  1. Preheat the oven to 180 C (355 F) on upper and lower heat without a fan.
  2. Wash the lentils well and soak in water for at least 4 hours, preferably overnight, for them to expand and soften.
  3. Sieve the lentils and add them to the food processor. Pulse until it becomes a puree.
  4. Transfer some pureed lentils to a bowl then add the yogurt, eggs, baking powder, salt, and olive oil into the processor. If your food processor is big enough to mix all ingredients there is no need to take out some of the lentil purees.
  5. Mix all ingredients (including the puree in the bowl) in the food processor and pulse until everything is smooth.
  6. Oil the tray with olive oil and pour the mixture into the tray.
  7. Sprinkle some nigella and sesame seeds.
  8. Place the tray into the oven and bake it for 35 minutes.
  9. Rest for about 30 minutes to cool and eat with loved ones.

Savoury Lentil Cake

  1. Preheat the oven to 180 C (355 F) on upper and lower heat without a fan.
  2. Make the plain lentil bread mixture by following the steps above.
  3. Add the halloumi, spring onion, dill, and black pepper into the mixture.
  4. Oil the tray with olive oil and pour the mixture into the tray.
  5. Sprinkle some nigella and sesame seeds and put them into the oven for about one hour and ten minutes.
  6. Let it rest for about 30 minutes to cool down and eat with loved ones.
