Chocolate Cake with Plum Jam

Ingredients

For cake:

  • All purpose flour: 350 g | 2 and 3/4 cups
  • Cocoa powder: 2 tbsp
  • Baking soda: 2 tsp
  • Margarine (melted, cooled): 125 g | 1/2 cup
  • Plum jam: 320 g | 1 cup
  • Milk: 250ml | 1 cup
  • Eggs: 2 pcs
  • Granulated sugar: 200g | 1 cup

For chocolate glaze:

  • Powder sugar: 200g | 1 cup
  • Margarine: 125g | 1/2 cup
  • Cocoa powder: 2 tbsp
  • Water: 1 or 2 tbsp (depends on consistency)

Instructions

  1. Prepare baking tin 35cm x 25cm | 14”x10” lined with parchment paper and preheat oven at 180°C | 350°F.
  2. In large bowl mix together all purpose flour, cocoa powder and baking soda. Set aside.
  3. In another bowl mix carefully milk and plum jam. Set aside.
  4. Use mixer to beat eggs and sugar until smooth.
  5. Add 1/3 of dry ingredients into beaten eggs and combine. Then add another 1/3 of dry ingredients, milk and plum mixture and cool melted margarine. When combined, pour the rest of dry ingredients into and continue mixing until well combined.
  6. Pour batter into baking tin and bake 20min. Do not take the cake out immediately, let it stay in the oven - turned off for 10min longer. Then cool the cake completely.
  7. Prepare chocolate glaze. Melt margarine in small pot, in the meantime add cocoa powder and powder sugar. Mix all the time! It is important to reach perfect texture. If mixture is too thick pour 1 or 2 tbsp of water. Bring to boil and stir vigorously until sugar is dissolved.
  8. Quickly pour boiling chocolate mixture onto cake and use spatula to spread it over. Place the cake in cool place for a while to set chocolate glaze.
  9. Share with friends and family!
