DIY Chipotle Bowl | Steak and Rice, Black Bean Salsa, Avocado Sauce

I mean, who doesn’t love chipotle? I’m sure there are people out there who don’t…but if that’s so, your taste buds are obviously flawed. LOL just kidding.Regardless of your opinion, you will love this steak and rice bowl with black bean salsa and avocado sauce.

It is so simple and the flavors all combined in one bite is just inexplicably delicious! This is perfect for meal prepping, however with all my recipes, I don’t suggest making food for more than 3 days in advance.

This makes 3 meals for dinner or 3 meal prep bowls! The avocado sauce will keep from browning as long as you added a good amount of lime juice and sealed tightly in a air tight container.

Ingredients

  • 1.5 Pounds Boneless Beef Sirloin Tip Steak
  • Salt, Pepper, Garlic Powder to Taste

Salsa:

  • 2-3 Roma Tomatoes
  • 1 Jalapeño Pepper, Seeded and Finely Diced
  • 1 Medium Onion, Finely Diced
  • 2 Cloves Garlic, Finely Minced
  • 1-14 Ounce Can Organic Black Beans, Drained and Rinsed
  • ½ Cup Fresh Parsley, Chopped
  • Juice of 1 Lime
  • 1 Teaspoon Apple Cider Vinegar
  • 2 Teaspoons Olive Oil
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Ground Cumin
  • 1 Teaspoon Oregano

Avocado Sauce:

  • ½ Cup Plain Greek Yogurt
  • 3 Cloves Garlic
  • ¼ Cup Onion
  • 2 Medium Avocados
  • Juice of 1 Lime
  • 2 Tablespoons Fresh Parsley
  • ½ Teaspoon Dried Oregano

Rice:

  • 1 Cup Extra Long Grain White Rice
  • 2 Cups Chicken Stock

Instructions

  1. Take the steak out of the refrigerator 30 minutes before grilling. This prevents tough meat.
  2. In a medium bowl, toss to combine chopped Roma tomatoes, jalapeno, onion, garlic, black beans, parsley, juice of a lime, apple cider vinegar, olive oil, chili powder, cumin, salt, and pepper. Set aside.
  3. In a small food processor or blender, blend together Greek yogurt, garlic, onion, avocado, parsley, juice of a lime, salt, pepper, and oregano. Blend until creamy and smooth. Set aside.
  4. Rinse rice with cold water until liquid is somewhat clear. Add chicken stock and season with salt and pepper. Bring to a boil and immediately reduce heat to the lowest setting. Place on the lid nice and tight and allow to cook for 15 minutes. DO NOT LIFT LID. Fluff with a fork.
  5. Season steak with salt, pepper, and garlic powder to taste. Cook on a hot grill to desired doneness. Remove from grill and allow to rest before cutting. About 10 minutes. Slice.
  6. Assemble your bowl.
