Ingredients

Cookies:

  • 90g Unsalted butter
  • 90g Sugar
  • 2 Pinch salt
  • 1 (53-54g) Egg
  • 230g Cake flour
  • 50g Almond flour

Coating chocolate:

  • 200g dark coating chocolate
  • 200g Mild coating chocolate
  • 200g white coating chocolate

Instructions

How to make cookies

  1. Beat the unsalted butter of the room temperature smoothly.
  2. Combined sugar and salt with butter.
  3. Add egg and mix them until they are combined thoroughly.
    Mix until sugar remains as tiny particles when you rub them.
  4. Add sieved cake flour and almond flour.
    5, Beat the mixture like cutting it with the upright spatula until dust powder is invisible.
  5. Place the dough in a plastic bag and roll out it into 3mm.
  6. Refrigerate for 1 hour.
  7. After dredge with dusting flour, roll out the dough again.
  8. Cut out the dough into the size of the block chocolate mold.
    This cookie doesn't spread so cut out the dough precisely.
    If you have a cookie-cutter of a similar size, you could use it easily.
  9. Do panning.
  10. Bake it at 170℃ (340℉) for 10-12 minutes

How to make the block chocolate.

  1. Place dark, milk, white coating chocolate in each piping bag and tie up each piping bag.
  2. Place the dark chocolate piping bag into a deep bowl.
    Pour hot water into the bowl and then melt the chocolate completely,
  3. Cut the piping bag’s tip and squeeze the chocolate into the block chocolate mold.
  4. Sway the mold to spread and flat chocolate.
  5. Hit the mold down to the floor lightly to release the air.
    Do in the same way for milk and white chocolate,
  6. Place it in the refrigerator to harden completely.
  7. Turn upside down and press down the center to unmold chocolate.

Mounting

  1. Cooling down cookies, take them off after squeeze chocolate at the center, cover with block chocolate.

Notes

If you cover with block chocolate after squeezing chocolate on all of the cookies at once, the chocolate could be harden, So squeeze the chocolate on just several cookies and cover with block chocolate.
